Happy Hour {oh so happy}

It has been a long and strange week for me so I have felt the need for a drink, a little more than usual. But, the other night when I went out with some girl friends, when hey ordered beer, I ordered lemonade. I have to say it was JUST as satisfactory as an ice cold pint of Hefeweizen in my hand. Here, below, is a recipe for mint lemonade that it guaranteed to make your taste buds sing on a hot Saturday afternoon. Of course, if you are making it later in the day, a little vodka would surely make a nice addition.

Homemade Mint Lemonade

What You'll need...
2 cups granulated sugar
6 cups water
2 cups freshly squeezed lemon juice
1/2 cup fresh whole mint leaves

Directions...
Make a simple syrup by combining 2 cups sugar and 2 cups water in a saucepan and bringing to a boil. Stir until sugar is dissolved and then let cool.

Pour lemon juice and remaining 4 cups water in a large pitcher. Add 1 cup of the simple syrup and taste. Gradually add more simple syrup to reach desired sweetness. 

Stir in mint leaves and refrigerate for 1 hour. Serve over ice.

  1. I also crave for lemonade every once in a while, lol! It's like a refreshing break from all these cocktail drinks. It's so easy to make, really simple yet really refreshing! You're right though about the vodka, giving it a little kick at night won't hurt,:)
